Oatmeal Chocolate Chip Cookies

1 c. butter, softened
1/2 c. sugar
1 c. brown sugar
2 eggs
2 t. vanilla
1 c. flour
1/2 t. baking soda
1/2 t. salt
3 c. oats
1 c. chocolate chips
1/2 c. nuts (optional)

Directions ...

Cream together first three ingredients. Add eggs - one at a time. Add vanilla. Combine flour, baking soda and salt. Gradually add to mixer. Add oats, chocolate chips and nuts.

Cook at 325 for 12 minutes.

Grandma's Goulash

I don't actually think this was my grandma's goulash. However, growing up it was always called Grandma's Goulash - I didn't ask any questions. I just ate it. Delicious!

Grandma's Goulash

1 1/2 - 2 lbs ground meat (I used beef and pork)
1 T. paprika
salt and pepper
1 large green pepper, chopped
1 large onion, chopped
1 carrot, finely chopped
3 cloves garlic
16 oz. pasta sauce
1/3 c. sliced black olives
1 lb. cooked pasta (I use spirals or elbows)

Directions ...

1. Brown ground beef and pork in dutch oven. Season with 1 T. paprika and salt and pepper while browning. Drain.

2. Add chopped green pepper, onion, carrot and garlic. Cook over medium high until onion is tanslucent.

3. Add pasta sauce. Cook through about 5 to 10 minutes.

4. Toss with pasta. Heat another 5 to 10 minutes.

This can easily be made gluten free if you substitute rice pasta.

Chocolate Chip Cheesecake Bars

My friend Annie and I made these in junior high ... that's how easy they are.

Chocolate Chip Cheesecake Bars

1 roll chocolate chip cookie dough
1 8 oz. package cream cheese
1 c. sugar
1 egg
1 t. vanilla extract

Directions: Take 1/2 cookie dough roll, cut into small pieces and press into an 8 x 8 pan (lightly greased). Mix remaining ingredients. Spread over cookie dough. Take remaining 1/2 roll of cookie dough, cut into small pieces and place on top of cream cheese mixture.

Bake for 45 minutes at 350 degrees.

Sloppy Joes

Although this is traditionally a red meat dish, I prefer to use ground chicken or ground turkey. The swap is hardly noticeable but a lot healthier! Super easy ... don't bother eating it out of a can. Homemade is easy and delicious and much better for you!

Sloppy Joes

1 lb. ground chicken or turkey (or beef)
1/2 c. chopped green pepper or celery
1 medium onion, chopped
1 T. brown sugar
1 t. dry mustard
8 oz. tomato sauce
1/2 c. ketchup
1 T. Worcestershire sauce
1 T. vinegar

Directions: In large skillet, brown chicken, green pepper and onion. Drain well. Stir in remaining ingredients. Cover and simmer for 15 to 20 minutes. Stir occasionally until thoroughly heated. Serve over rice or as a sandwich.

Mujadara

Thanks Christy for introducing me to this fantastic dish!

Mujadara

2 c. dried lentils, rinsed
1 c. basmati rice, rinsed
2 large yellow onions, sliced
3 1/2 c. chicken or vegetable broth
1 t. cumin
1/4 c. oil

Directions: Combine lentils, rice, and broth in a covered pan on stove. Cook over medium heat until broth is absorbed and rice is tender. (Add water if it seems too dry.) Add cumin after most of the liquid is absorbed.

As soon as the lentils are cooking, slice the onions and fry them in oil until they are dark brown. This step takes quite awhile ... don't rush it! The crispy brown onions are the key to delicious mujadara. Pour the crispy onions and the remaining oil over the lentils and rice. Top with Lebanese Salata ... recipe below.

Lebanese Salata

Dice tomatoes, cucumbers, scallions and fresh parsley ... mix with red wine vinegar and good olive oil. Easy and delicious!

Tortilla Soup

I have to give complete credit for this recipe to my friend, Meredith! Perfected in Yampa ...

Tortilla Soup

Slice 2 large onions and saute in butter.
Add diced chicken breast.
Add 2 or 3 cloves chopped garlic.

Stir in 2 cans chicken broth, 1 can tomatoes and chilies, 2 sm. cans chopped mild chilies, 1/2 bottle beer, 1 can black beans, 1 can corn, handful rice.

Season with coriander and cumin. Cook until rice is done (30 - 45 minutes).

Serve over tortilla chips and shredded jalapeno jack cheese. Enjoy!

Thai Chicken (Crock Pot)

This recipe is so easy you will wonder if you missed a step. You didn't - it's really that easy!

Thai Chicken

4 chicken breasts, cut in 2 or 3 pieces each
1 T. grated ginger
1 small onion, sliced in thin strips
1 (14 oz.) can coconut milk
3/4 t. turmeric
1/4 t. crushed red pepper flakes
1 (8 oz.) can pineapple chunks, drained
2 T. cornstarch
2 T. broth or water

Cooked rice
1/2 c. chopped peanuts (for garnish)

Directions: Place chicken pieces in the crock pot. Add ginger, onions, cocount milk, turmeric and pepper flakes. Cover and cook on LOW for 4 to 5 hours or until chicken is tender. Turn to HIGH and add the pineapple. In a small bowl, dissolve cornstarch in water or broth; stir into chicken mixture. Cover and cook on HIGH for 15 minutes. Serve over rice and garnish with chopped peanuts.

Easy rice suggestion ... I make a delicious cilantro brown rice by cooking 2 packages of 10 minute brown rice and then simply adding 1 T. of butter and a handful of chopped cilantro. Delicious! It tastes great with the flavors of the thai chicken.

Chicken in a Crock Pot

I really do not have a better name for this recipe. I am open to suggestions...

Chicken in a Crock Pot

2 to 3 lbs. chicken breast, cut in pieces ... lightly brown in oil and put in crock pot

Stir together ...

16 to 28 oz. canned diced tomatoes
1 large onion, chopped
1 green pepper, chopped
1/2 c. dry white wine
1 small can black olives, sliced
1/2 lb. fresh mushrooms, sliced
basil, oregano and parsley
salt and pepper

Pour these ingredients over the chicken and cook on HIGH for 4 hours.

Serve over rice or pasta.

Glazed Cinnamon Apples (Crock Pot)

Great winter dessert! I found this recipe when I bought Reynolds Crock Pot Liners ...

Glazed Cinnamon Apples

6 large Granny Smith apples, peeled, cored and sliced
1 T. fresh lemon juice
1/2 c. granulated sugar
1/2 c. brown sugar
2 T. flour
1 t. cinnamon
1/4 t. nutmeg
6 T. butter, melted

Vanilla ice cream, crumbled oatmeal cookies (optional)

Directions: Place apples in the crock pot; drizzle with lemon juice. Mix sugars, flour, cinnamon, and nutmeg in a medium bowl. Sprinkle mixture over apples; stir gently to coat. Drizzle with butter. Cook on LOW for 3 hours or HIGH for 2 hours until apples are done.

Serve warm apples over vanilla ice cream. Crumble oatmeal cookies on top.

Beef Stroganoff (Crock Pot)

Beef Stroganoff is a big hit in our house but cooking it on the stove is a little too time consuming these days. This crock pot recipe tastes just as good!

Beef Stroganoff

1 1/2 to 2 lbs. round steak (sliced in 1/4 in. strips)
1 onion, sliced
2 cloves garlic, crushed
1 T. Worcestershire sauce
1 T. ketchup
1/2 t. paprika
1 can (10 oz.) beef broth
2 T. red wine (optional)
1/4 lb. fresh mushrooms, sliced
3 T. cornstarch
1/4 c. water or broth
1 c. sour cream
Cooked rice or egg noodles

Directions: Brown steak in a bit of oil - season with salt and pepper. Place in crock pot with onion and garlic. Mix Worcestershire sauce, paprika, broth and ketchup in a bowl. Pour mixture over steak. Cover and cook on LOW 6 or 7 hours or until steak is tender. Add wine and mushrooms and turn heat to HIGH. Dissolve cornstarch in water or broth in a small bowl. Add to meat mixture, stirring until blended. Cover and cook on high 15 minutes or until slighty thickened. I also added a 1/2 c. of green peas at this point to give it a little color. Turn OFF and stir in sour cream. Serve over rice or egg noodles. Easy!

Mint Chocolate Chip Saucepan Brownies

I am always promising friends and family my recipes and I never get around to actually sending anyone any recipes so I thought this might be a good venue for sharing some of my favorite foods. I am starting with a dessert ... who doesn't love dessert??? This recipe is really easy and very delicious.

Mint Chocolate Chip Saucepan Brownies

Step 1. Preheat the oven to 325 degrees. Combine the following ingredients in a saucepan. Bring just to a boil and remove from heat:

3/4 c. sugar
2 T. water
1/3 c. butter

Step 2. Add 1 c. mint chocolate chips and blend until smooth.

Step 3. Add 1 t. vanilla.

Step 4. Add 2 eggs, one at a time. Beat well after each egg.

Step 5. Gradually add: 3/4 c. unsifted flour combined with 1/4 t. salt and 1/4 t. baking soda.

Step 6. Stir in 1 c. semi-sweet chocolate chips. Pour into greased 9 x 9 pan. Bake 30 - 35 minutes.

Easy and delicious!!! ENJOY!
